BREAD IMPROVERS - Crustozyme BF WB 1000Bromate Free Whole wheat / Atta bread improver

CRUSTOZYME BF WB 1000 is a whole wheat bread improver. Breads of excellent quality with 80% whole wheat flour can be prepared by using CRUSTOZYME BF WB 1000. It is free from Bromate.

Recipe

Whole wheat flour (Atta) 800 / 700g
Refined wheat flour (Maida) 200 / 300g
Sugar 40g
Salt 20g
Fresh Yeast 30 – 35g
Gluten 10g
Crustozyme BF WB1000 10 g
Crustomalt IT 130* 3 – 5g
(Depending upon requirements of colour)
Fat 30g (optional)
Water 740ml(approx)

Improver can be added directly to the flour. It is recommended to keep the Volume / Mass ratio below 4.4 – 4.75 for optimum results.
* Crust n crumb’s Dark Malt flour Optional Ingredients are for better results

Method

Method – High-Speed Mixing

Mix all the ingredients together in a high speed mixer for 180 seconds.
Dividing, rounding, sheeting and moulding as per requirement. (recommended volume to mass ratio is 4.4)
Proofing at 35 – 38C/ 70 – 80% RH for 60 minutes.
Bake at 230- 250C for 25minutes/ until baked well.
Cool 2 – 3 hrs on wire racks.
Slice and pack the breads 

Method – Spiral Mixing

Mix all the ingredients using a hook or in a spiral mixer on low speed for 3 minutes and then on high speed for 9 min / until the dough develops well.
Dividing, rounding, sheeting and moulding as per requirement. (recommended volume to mass ratio is 4.4)
Proofing at 35 – 38C/ 70 – 80% RH for 60 minutes.
Bake at 230- 250C for 25minutes/ until baked well.
Cool 2 – 3 hrs on wire racks.
Slice and pack the breads
