CRUSTOZYME BF WONDER 0.1 is a highly economical bromate free improver for bread varieties to improve the dough stability, tolerance and extensibility.
It improves the oven spring, bread volume, softness, crust colour, crumb colour and crumb structure.

Method

CRUSTOZYME BF WONDER 0.1 is designed for optimum performance in various types of breads and baking process though it is ideal for slow speed spiral dough mixing process.
The recommended dosage is 0.1 – 0.2% of flour weight.(10g – 20g per 10kg flour) In straight dough process, it is recommended to add CRUSTOZYME BF WONDER 0.1 in the mixer along with
wheat flour.
In sponge and dough system, CRUSTOZYME BF WONDER 0.1 to be added in the second stage of mixing (dough stage).
